Anxiously waiting....
I absolutely love looking at my pantry at this time of year. This is my first year where I have canned the majority of my families food for the coming year. I bought approximately 40 dozen cases of canning jars at the beginning of the year. I have just 8 dozen left to fill. The only thing remaining on my list of stuff I need to put away for winter is applesauce. In our neck of the woods apples are just starting to show up at the fruit stands and farmer's markets. I intend to put away at least 48 quarts of applesauce this year. It is the one thing that my entire family loves to eat that is a fruit and can be canned. Last year we made and froze applesauce and it turned out very well. The problem is that frozen applesauce is just not as handy as canned applesauce. You have to wait for the frozen sauce to defrost and it always ends up a bit watery as a result. I also want to put away cooked pumpkin but will have to freeze that since canning it isn't a safe option. I am so ready to finish my food list and pack up my canning supplies for the year.
