Done and done...

This week I finally completed all of my canning projects for the year. We rounded out this years canning by putting away another 16 quarts of pears. Pears are rather time intensive to can and pretty much my least favorite food to can. They do however taste amazing which counterbalances the work they require. My canning total for this years is over 800 jars of food. During the winter I will likely can another 36 quarts of meat and broth but not much more. I love being able to walk into my basement and throw together a meal in a moments notice because I already cooked so many things ahead of time. It has been a ton of work to put away that much food but I honestly believe it is worth the time and trouble despite the exhaustion I feel at this time of year.
