Making marmalade...
I have canned a great many things in the year since I first began canning. Today I entered new territory and made my first batch of marmalade. This was not just any marmalade but a very unusual type in my opinion. When I think of marmalade I envision orange marmalade. In looking through my canning book I ran across a recipe for red onion marmalade. I then remembered that I had a pile of red onions that I needed to do something with. After reading some online reviews of this particular recipe I decided to give it a try. This marmalade can be used as a sandwich spread or a glaze for meats. It smelled absolutely horrible while it was cooking but actually tasted really good. Hopefully it tastes as good when we put it on grilled burgers this weekend!
