Addicted to canning...

I love to can. There is no other way to put it. Canning is work and it is tiring but it just gives me such joy. I love looking at the jars in my pantry and knowing that they are there by my hand. It is so nice to know what is in those jars and who handled what prior to the food being canned. I like to try a new things each canning season. Today I tried something I never thought I would try and that was to make onion marmalade. At first this sounds kind of nasty but when you think about it and how you might use it this marmalade makes sense. It makes an excellent sandwich spread and a good glaze for roasted meats. I will say that is absolutely stinks up the house which is something I will remember next time. In the future I will make things like this on the back porch.
