Muffin fail.

Last summer I froze tons of grated zucchini. Our plants went absolutely crazy and I felt like I needed to put away whatever I could. I have now found myself trying to find as many different ways as I can to use up my stockpile. I have been experimenting with putting the zucchini into different recipes for cookies, bread, and muffins. This weekend I made a batch of chocolate muffins with zucchini and chocolate chips. The muffins baked up and looked wonderful. The problem is that we can't get them out of the muffin papers. I made mini muffins and the bottom half of the muffins is essentially stuck to the paper. We really are only able to eat the tops of the muffins which mean half of what I baked is wasted. I am not sure if I can give the bottom half with the papers to the chickens to sort out or not. I ended up sticking the muffins in the freezer with the hope that when they thaw the moisture will loosen the paper.
